Coach Lou Holtz has always been a huge supporter of mine, and I’m thrilled to be able to include his favorite Pumpkin Cake recipe in my Domer Dishes cookbook. This recipe was submitted on his behalf by Kris Conner, his executive assistant.

Coach has left such a long and lasting impact on not only his players, but upon so many of us. I find myself using his “Holtz-isms” almost daily, and I think my kids can recite many of them even before I can use them. I’m sure you know many of them as well. Such as “Trust, Love, Commitment.” Coach’s rules, “I follow three rules: Do the right thing, do the best you can, and always show people you care.” And of course, “For those who know Notre Dame, no explanation’s necessary. For those who don’t, no explanation will suffice.” Here is his favorite Pumpkin Cake recipe.

Pumpkin Cake – Coach Holtz

Equipment

  • 1 Cake pan
  • 2 Mixing bowls

Ingredients
  

For Cake

  • 2 cups Sugar
  • 2 teaspoons Baking powder
  • 2 teaspoons Cinnamon
  • 2 teaspoons Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Flour
  • 3 Eggs
  • 2 cups Pumpkin
  • 1 cup Oil

For Icing

  • 1 Stick Butter, softened
  • 8 ounces Cream Cheese
  • 1 teaspoon Vanilla Extract
  • 1 box Powdered Sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine and mix all cake ingredients.
  • Grease and flour baking pan.
  • Add mixture and bake 30-40 minutes.
  • Meanwhile. combine and mix all icing ingredients together.
  • Once cake has cooled, frost and serve.
